About: Handley is known for minimal-intervention, food-friendly wines, and particularly for their California spin on Alsation white wines. Winemaker Randy calls this wine, “Golden Sun Drops” — think peach and apple blossom aromas with notes of guava, stone fruit, and bright acidity.

A dry white wine is ideal for this recipe. If you do not have any on hand, the Maker Pinot Noir included in this kit will work just fine!
Try to purchase fresh, not frozen scallops for the most success with this dish. Frozen isn’t necessarily a deal breaker, but they will need to be fully defrosted in the refrigerator then, laid out on a paper towel lined baking sheet, to remove any excess moisture.
Ideal size: ask for U10, U15 or 10/20
